Ingredients

  • Two 10-ounce chicken breasts cut into 4 uniform slices
  • 8-10 ounces gemelli pasta
  • 3 cups baby spinach
  • 2 tablespoons olive oils
  • For garnish, minced Italian parsley
  • Salt and pepper to taste
  • 1/2 cup chicken broth or white wine
  • 1/3 cup shredded Parmesan cheese
  • 2 tablespoons butter
  • 2 shallots, minced
  • 4 minced garlic cloves
  • 1 cup cherry tomatoes, halved
  • 3/4 cup heavy cream

  1. Bring a large saucepan of salted water over high heat to boil. Cook pasta al dente. Strain the pasta and place it aside.
