This nacho recipe is a hit because you can make more for larger crowds. It’s so good you won’t want to stop eating it!

Skillet Nachos: The Key

Making nachos in a skillet is my favorite because you can stack up the chip layers without spilling over onto your plate/pan. The high-rimmed dish keeps everything contained. You can also cook your meat or chicken in the skillet before you assemble your nachos.

For best results, stack skillet nachos in two layers. Because the surface area of the skillet nachos is smaller than that of a larger sheet pan, more stacking is required. One layer of nachos is made with all toppings. I then add more chips to the top and repeat. Each layer will have all the fixings.

Restaurant-Style Tortilla Chips

Although tortilla chips are hotly debated, I’m not a fan of scoops. Classic restaurant-style tortilla chips should accompany nachos. Although I love the On The Border and Late July brands, many solid bags have good flavor. I am also a big fan of multicolored tortilla chips. Yes, they are the purple and red varieties.

Using Rotisserie Chicken

BBQ chicken nachos can be made with chicken breasts or tenders in small pieces. You also have the option to use precooked rotisserie poultry. Rotisserie chicken has the advantage of being able to shred the chicken into very tender strips. I aim for 2-3 cups of cooked chicken or 1 1/2 pounds for a full-sized skillet.

It’s up to you how much BBQ sauce you use. A light but generous sauce coating is what you want. My one tip is to search for Sweet Baby Rays.

BBQ Chicken Nachos

Ingredients

  • 1 1/2 – 1 1/2 lb chicken or rotisserie chicken. Cut into bite-sized pieces
  • 16-ounce bag of shredded cheddar cheese or Mexican-blend cheese
  • Tortilla chips in a 12-ounce bag
  • 1/4 cup salsa
  • Thinly slice 3-4 green onions
  • 2 to 3 ounces can of sliced black olives
  • 1 Roma tomato, diced
  • 1 tablespoon olive oil
  • Optional (sliced jalapeno)
  • Serve with sour cream
  • 1/3 cup barbecue sauce (I like sweet baby Ray’s)
  • 1 avocado, pitted and chopped
  • 4 oz can be chopped green chilies, drained

Cooking Steps & Instructions

  1. Preheat oven to 350°F
  2. In a 12-inch cast iron skillet, heat oil on medium heat. Cook the chicken until it is fully cooked and lightly golden. A little extra crisp adds a nice texture. Toss the mixture in a bowl. Add 1/3 cup BBQ sauce to taste.
  3. Remove the skillet from heat and set aside.
  4. To the skillet, add a layer of tortilla chips (about 50%) to the bottom.
  5. Split the toppings in half, and then spread the first half over the chips. I prefer to add the cheese last. Add the cheese to another stack of chips.
  6. Bake for 10 minutes until the cheese has melted completely and the edges are crisp.
  7. Serve with sour cream and guacamole.

The cheese will not be used in all cases. An 8-ounce bag might work in certain cases. I use about 1 cup or a little more per layer. It’s nice to have more.
